Mucinex and Mushy Rice

Sorry ladies and gents for taking so long to post. I've been fighting sinus crud and it hasn't been fun! I highly recommend Mucinex. The pill version is great but the liquid is even better! This stuff will clear you up quick and as a frequent allergy sufferer it's well worth the price. Anyway, on to today's recipe.

Tonight's dinner I tried a recipe called No Peak Chicken found on a blog called Thrifty Decorating. It seemed simple enough and as you all know I'm all for easy cooking. The ingredients were fairly cheap to pick up and I just served it with some steamed broccoli with cheese sauce. This recipe literally has 4 ingredients and a can or 2 of water. Basically, you mix a can of cream of celery, cream of mush, original Uncle Bens rice, and 1-2 cans of water (I used 1 can of water and 1 can of chicken broth).once these items are all mixed together and are some-what smooth you just throw in some chicken, cover and bake at 350 for 2 1/2 hours. Easy right? Your right it was.

I had my chicken in for 2 hours and though it smelled amazing, I could tell that is was already getting too over done so I pulled it out. Sure enough the chicken was cooked through but it was browner on the sides and bottom than I would like. I will say the chicken was fork tender and was perfect for my son however, even with it being tender it was very dry which really confused me. Not sure how I managed that one! Part of the rice was okay but anything that was directly touching the sides or bottom was crunchy. And by crunchy I mean I may have cracked a tooth. It's no wonder Koopa only ate his strawberries and a few bites of chicken. This dish also turned out way salty so I was glad that I didn't season my chicken like I usually do.

All in all it was a nice try but this dish will not be gracing our tables again and I will not be upset to see it go.

Now, for updates on the home front. DH is currently out of state for work and while we do miss him it's nice to know that he is working hard to provide for us and is providing a service to the oil field that literally saves lives. So proud of this man! Koopa is such a stinker. It is an adventure all the time with this guy and I feel like I can hardly keep up with him much less the house cleaning. My question to moms out there, how do you get your toddler to participate in clean up time?
